Egg Bhurji is a very easy and quick scrambled egg recipe. It is an Indian style of making scrambled eggs with onions, tomatoes and spices. Egg Bhurji with bread or rotis or pav make a healthy and filling breakfast. This is very ideal for bachelors and working people as it can be made in a jiffy. Today we will learn how to make Spicy Egg bhurji curry/masala following this easy recipe.

Egg Bhurji Recipe-Egg Bhurji Curry

   Ingredients needed

   Eggs -2
   Onion finely chopped -1/2 cup
   Tomato -1 big
   Green chilli -1 finely chopped
   Ginger Garlic paste -1/2 tsp
   Salt to taste

   Spice Powder

   Chilli powder -1/2 tsp
   Coriander powder -1 tsp
   Turmeric powder- 1/4 tsp
   Kitchen king masala or garam masala powder-1/2 tsp

   For the seasoning

   Oil -1 tbsp
   Cumin seeds/jeera -1 tsp

   For Garnishing

   Coriander leaves -finely chopped -2 tbsp

Preparation 

Beat eggs slightly with a little salt using a fork or spoon.

Finely chop onion, green chillies and tomatoes.

Method 


Heat oil, add cumin seeds, when it sizzles, add finely chopped onion and green chillies.

Saute until onions turn slightly brown. Add ginger garlic paste and saute for a few more minutes.

Then add tomatoes, all the spice powder and salt needed.

Cook until tomatoes turn soft and the raw smell of the spice powder goes.

Add the beaten eggs and saute for 2-3 minutes on medium heat until the eggs are cooked and scrambled.

Anda Bhurji Curry

Garnish with coriander leaves and serve hot with bread toast, rice, parathas or chapatis.

      Yes, you can but green chilli gives a nice flavor and taste to the dish.
