 Recipe Category: Breakfast-Sandwich
Recipe Cuisine: Indian-Mumbai
 Author:Padhu Sankar   Ingredients needed

Brown Bread or White bread – 8
   Butter as needed
   Green Chutney as needed

For the Potato Filling

   Potato – 2
   Onion – 1 medium size
Green chillies – 1-2 finely chopped
   Turmeric powder – 1/4 tsp
   Salt needed

For the Seasoning

   Oil – 3 tsp
   Cumin seeds -1 tsp
   Curry leaves – 1 sprig

For Garnishing

Finely chopped coriander leaves- 1 tbsp

For the Topping

   Onion slices
   Tomato slices
   Cucumber slices
   Chaat Masala – as needed

Preparation

First prepare the green chutney as given in the link below. Grind green chutney with very less water or else the bread will turn soggy.Green Chutney Recipe

Then prepare the potato masala as given below
Method for the potato filling
Pressure cook potatoes until soft, peel the skin and mash it well but do not make it to a paste.
Heat oil in a pan, add cumin seeds, when it sizzles, add chopped onions, green chilli, curry leaves and saute until onions turn transparent.
Add potatoes, turmeric powder, salt needed. Mix well and cook for 5 minutes on low flame. Remove from heat and leave it to cool.

Method

Now we have bread, potato masala, green chutney, butter (I used homemade butter) vegetables and chaat masala powder ready (available ready made).
Trim the corners of the bread if required. I did not trim it. Apply butter on one side of the bread.

Then apply green chutney on the bread. Then spread potato masala on top of the green chutney.
Place 1 or 2 slices of cucumber, tomato, onion on top of the potato masala and sprinkle chaat masala powder on top of it.

Close it with another bread. Apply butter on top of that bread and toast the prepared sandwich.

I used a stove top sandwich toaster. Grease a little butter on the toaster, place the prepared sandwich and toast both sides until golden brown. If you do not have a toaster, you can do this on a tawa also by pressing it well.
Repeat the same process for the rest of the bread.

Serving suggestions

Cut diagonally and serve accompanied with a glass of fresh fruit juice to make a filling and healthy breakfast.
You do not need any side dish for this as it tastes delicious on its own. If needed you can have it with tomato ketchup.

Yes, it can be grilled. You can keep it at 180 degree C. You much keep an eye on it and switch off when done.
