 Prep Time : 10 mins

 Cook Time : 20 mins
 Serves: 2-3
 Recipe Category: Side Dish-Healthy Snacks
 Recipe Cuisine: International
 Author:Padhu Sankar

   Ingredients needed

Broccoli – 1 medium sized head
   Olive oil – 2 tbsp
   Salt to taste
   Pepper powder to taste
   Fresh lemon juice to taste
   Dry Herbs (optional)

Preparation

Cut broccoli into even sized florets (for even roasting). Wash, shake off excess water and pat it dry with a towel. I usually do this 30 minutes before, so that the broccoli will be completely dry, though not necessary. But make sure it is completely dry.

Pre-heat oven at 180 degree C for 10 minutes.

Line the baking tray with aluminium foil or parchment paper to prevent sticking.

Method

In a bowl, add olive oil, salt, pepper powder and herbs of your choice (I used Italian seasoning) and mix well. Add broccoli florets and toss well so that it is well coated with the seasoning.

Spread it on a
single layer in an aluminium foil lined baking tray and bake in a pre-heated oven (middle rack) at 180 degree C for 20-25 minutes or until the tips of the florets starts to brown slightly. (Stir it after the first 15 minutes of baking).

Once done, remove from oven, squeeze fresh lemon juice over it, mix well and enjoy it hot as a side dish or as a snack.
