What I love about couscous is not only it is quick and easy to cook but also it pairs well with most of the vegetables. As I have already posted lot of couscous recipes, you must be knowing what couscous is. Today we will learn how to make coconut flavored couscous with sweet corn following this easy recipe with step wise pictures.
Place couscous in a bowl and add salt to it. Mix 3/4 cup of coconut milk with 3/4 cup of water and bring it to boil. Pour the coconut milk + water mixture over the couscous.
Keep it covered. Let it sit until all liquid is absorbed.
Fluff it with a fork and keep it aside. Heat coconut oil in a pan, add cumin seeds, when it splutters, add hing, curry leaves, finely chopped onions and green chillies.
Saute until onions turn transparent. Add sweet corn, chilli powder and salt needed. Cook covered for a few minutes.
Then add couscous, mix well and cook for a few more seconds. Garnish with finely chopped coriander leaves and serve hot.
Enjoy making this delicious coconut flavored couscous with sweet corn and give me your feedback.
