Couscous with Fruits and Nuts-Easy Fruity Couscous Recipe

Couscous is very easy and fast to cook. It is so versatile that you can combine it with any vegetables, herbs or fruits to make a filling meal.  I have prepared couscous by combining it with nuts and fruits to make a delicious meal.  It can be had for lunch or for dinner. Learn to make couscous with fruits and nuts following this easy recipe with step wise pictures.

Couscous with Fruits and Nuts

   Ingredients needed

   Couscous – 1/2 cup
   Sugar – 2 tsp
   Saffron – 4-5 strands
   Milk – 1/2 cup
   Water – 1/2 cup
   Salt needed
   Ghee/clarified butter – 2 tsp

   Nuts-Fruits-Paneer

   Almonds -10-15 chopped
   Pistachio – 10-15 chopped
   Cashew nuts – 10-15 chopped
   Raisins – 20
   Apple – 1/2 cup chopped
   Pineapple – 1/2 cup chopped
   Pomegranates – 1/3 cup 
   Paneer – 10 small cubes

   For the seasoning

   Butter – 1 tbsp
   Cloves – 2
   Cardamon – 1
   Cinnamon – 1 inch piece
   Green Chilli -1 slit

   For Garnishing

   Fried Onions – 1 tbsp (optional)
   Coriander leaves -1 tbsp finely chopped

Preparations


Fry nuts (almonds, pistachio, cashew nuts) separately in a tsp of ghee stirring until lightly browned. Keep it aside.

Fry the raisins in 1/2 tsp of ghee until they puff up.

Clean and chop all the fruits and keep it ready.

Cut paneer into cubes and fry on low heat in 1/2 tsp of ghee until lightly browned.

Take couscous in a bowl, add sugar to it and mix well.

Soak saffron stands in a tbsp of warm milk. Mix 1/2 cup of milk with 1/2 cup of water and bring it to boil.

Pour the boiling milk + water mixture over the couscous, add the saffron milk, mix well and keep it covered for 10-15 minutes.

After 15 minutes, the couscous would have absorbed all the liquid. Fluff it with a fork and keep it aside.

Method


Heat butter in a pan, add cloves, cinnamon, cardamom and green chilli. Saute for a few seconds and then add the couscous and needed salt.

Mix well so that the couscous is well coated with the butter. Switch off the heat.

Easy Fruity Couscous Recipe

Add the nuts, raisins and paneer.

Add all the fruits and gently mix to combine.

Garnish with finely chopped coriander leaves and fried onions.

It can be had on its own or if preferred enjoy it with any onion tomato gravy.

    Colourful and tempting! I was reading about Moroccan cuisine when I first read about couscous. Had never even heard the name before. I'm glad I stumbled upon this. Would love to try it out!
