 Recipe Cuisine: Indian

   Ingredients needed

   Mixed Fruits – 2 cups
   Sugar syrup – 4 tsp
Vanilla Ice Cream – 2 generous scoops
Assorted nuts – 2 tbsp toasted (optional)

   Wafer biscuit for decoration
   Cherries for decoration

Preparations

Nuts – You can use almonds and cashew nuts if preferred. Toast the nuts separately and chop it finely. (I have not used nuts)

Fruits – You can use any fruits of your choice. I have used papaya, pineapple, pomegranates, mangoes, apple, banana and few grapes (use seedless grapes). Wash and cut all the fruits into small pieces.

Sugar syrup – In a pan, mix 3 tbsp of sugar and 3 tbsp of water. Heat to dissolve the sugar. Then simmer for 2-3 minutes. Remove from the heat, add 2-3 drops of lemon juice and leave it to cool.  After it cools, refrigerate the sugar syrup.

Method

In a glass bowl/cup, mix together fruits (1 cup), 2 tsp sugar syrup and nuts. Top it with a scoop of vanilla ice cream.

Place a cherry and a wafer biscuit and serve chilled. Repeat the same for another bowl of fruit salad.

Note – You can store the remaining sugar syrup in a glass bottle in the refrigerator. You can use it to sweeten  fruit juices, smoothies, cold beverages etc.

To keep fruits like bananas and apples from getting oxidized, add a little lemon or lime juice to your fruit salad.
Also keep your fruit salad in the refrigerator. It will stay good until late evening, even if you prepare it in the morning. Also avoid using over ripe fruits.
