Falooda Ice Cream-Easy Royal Falooda Recipe

Falooda is a delicious cold dessert/beverage and is very popular, especially in India, Pakistan and Middle East. It is very simple to make at home. The combination of sabja seeds, falooda sev, ice cream, jelly, rose syrup, sweetened chilled milk is heavenly. Today we will learn how to make Royal Falooda following this easy recipe.

Falooda Ice Cream-Easy Falooda Recipe

   Ingredients needed

   Milk – 1 1/2 cup
   Sugar – 1 tbsp
   Jelly – 1/2 a packet
   Sabja seeds/basil seeds/tukmaria – 1/2 tbsp
   Falooda Sev – 4 tbsp or as needed

   Fruits

   Pineapple
   Apple
   Pomegranates
   Mangoes

   Nuts

   Almonds – 10-12
   Cashew nuts – 10-12
   Pistachio – 10-12

   Glazed Cherries – 2 tbps
   Vanilla Ice Cream – 2 generous scoop

Preparation 

Boil 1 1/2 cup of milk and reduce it to 1 cup. Sweeten it with sugar. Cool and refrigerate it. We need chilled milk for making falooda.

Prepare jelly as per instructions on the packet. You can use any flavored jelly (preferably strawberry or raspberry flavor). Vegetarian jelly is available in the market or you can use agar agar. One packet of jelly makes 4 faloodas.

Soak 1/2 tbsp of sabja seeds in 3/4 cup of water for 20 minutes. Drain the excess water and keep it aside.

Prepare falooda sev as given in the Falooda Sev Recipe. You can also use ready made falooda sev. If you cannot get or if you do not want to make falooda sev at home, you can use cooked fine vermicelli.

Chill the glass in which you are going to layer the falooda for 10 minutes in the refrigerator.

Clean and cut all the fruits. I have used pineapple, apples, pomegranates and mangoes. Avoid fruits with high water content like watermelon, cantaloupe etc. You will need 1 cup of mixed fruits.

Toast almonds, cashew nut and pistachio separately and chop it. Keep it aside.

Chop glazed cherries and keep it aside. Reserve 2 whole cherries for garnishing.

Method

All the ingredients are kept ready below. Once the ingredients are kept ready, making falooda is a breeze.

There are no hard and fast rules when it comes to layering. It is your personal choice. For royal falooda, you can start with rose syrup but since I am not fond of rose syrup, I have skipped that.

Layer the bottom of the glass with jelly.

Then top it with sabja seeds.

Then top it with a layer of falooda sev.

Then add a layer of mixed fruits.

Add chopped nuts followed by chopped glazed cherries.

Add half cup of chilled sweetened milk.

Top it with a generous scoop of vanilla ice cream.

Garnish with some nuts, cherries and fruits. Finally decorate it with a whole cherry and serve chilled.

Repeat the same process to make another glass of falooda.

    Hi padhu. Can I skip the jelly and add rose syrup instead of it. Does it alter the taste too much ?

      Yes, you can skip jelly and rose syrup. It will alter the taste to some extent but still will taste great.
