Gnocchi is a type of Italian dumpling. I had a chance to taste potato gnocchi during my trip to the United Kingdom. I loved it so much. This potato gnocchi soup with vegetables is very delicious and is also very simple to put together. It makes a wholesome and filling meal when combined with whole wheat brown bread. Today we will learn how to make potato gnocchi soup (vegetarian) following our easy recipe.

Easy Gnocchi Soup Recipe

   Ingredients needed

   Potato Gnocchi -1 cup
   Extra Virgin Olive oil – 2 tsp
   Onion -1/2 cup
   Garlic cloves – 4-5
   Carrot – 1/2 cup chopped
   Capsicum – 1/2 cup chopped
   Vegetable Broth – 2 cups

   Herbs

   Dry Basil -1/2 tsp
   Oregano -1/2 tsp

   Pepper Powder to taste
   Salt to taste

Preparation


Chop all the vegetables finely.

Method

Heat oil in a pan, add finely chopped onion and garlic. Cook until onions turn translucent.

Add carrot, capsicum and cook for a few minutes.

Add vegetable stock and simmer for 10-15 minutes.

Add herbs and potato gnocchi to the simmering soup and cook until gnocchi begins to float.

Add salt and pepper powder to taste.

Serve hot with crusty bread. We had it for dinner and we absolutely loved it. The soup was very comforting and delicious.
