Easy Christmas Fruit Cake Recipe-Christmas Fruit Cake without Alcohol-Plum Cake

I wanted to bake something special for this Christmas, last year it was pinwheel cookies and crinkle chocolate cookies, this year it is this Quick and Easy Fruit Cake Recipe without Alcohol. This easy fruit cake is a simpler version of the traditional Christmas cake. You do not have to soak the dry fruits in alcohol, a week before as you normally do for the traditional Christmas cake. This is a very simple recipe prepared by boiling dry fruits and nuts with sugar, butter and spices. Today we will learn how to made Christmas Fruit Cake following this easy recipe.

Christmas Fruit Cake without alcohol

How to make Christmas Fruit Cake 
Recipe adapted from here 

Prep time – under 15 mins
Bake time – approximately 1 hour
Yields -7 * 3 1/2 inch loaf pan and another 4 inch disposable baking tray

Ingredients needed 

Butter – 150 grams
Sultanas -125 grams
Currants – 125 grams
Cashew nuts – 100 grams
Tutti frutti – 50 grams
Brown sugar – 130 grams
Dry ginger powder – 1 tsp
Cinnamon powder -1 tsp preferable or 2 inch piece
Baking soda/Cooking soda – 1 tsp
Water -1 1/4 cup
Eggs -2
All purpose flour/Maida – 300 grams
Baking powder – 2 tsp

Preparation 

Grease and dust the baking pan and keep it ready.

Sift flour and baking powder together and keep it aside.

Method

Mix all the dry fruits and nuts in a bowl. Dust it with a tsp of flour and keep it ready.

Add baking soda, sugar, water, butter, dry ginger powder, cinnamon powder and cook over medium flame until it boils.

Simmer for 2-3 minutes after it boils. Then remove from heat and let it cool completely. If you have used cinnamon stick instead of powder, remove the cinnamon pieces once it cools down completely.

Once the mixture has cooled, you can pre heat the oven at 180 degree C for 15 minutes.

Beat 2 eggs lightly with a fork and add to the cooled mixture. Beat egg into the mixture until well combined. I used the electric hand beater at low speed.

Fold in flour+baking powder mixture gently until well combined.

Pour mixture into the greased tin and spread it out evenly with a spatula. Alternatively you can tap the tin for the mixture to settle evenly.

Bake for 1 hour or until a skewer inserted in the center of the cake comes out clean.

Once baked, cool it and then invert the cake. Delicious, soft, moist and yummy Christmas Fruit Cake/Plum Cake without alcohol is ready.

Note – You can omit tutti frutti if you do not prefer it, but see to it that the dry fruits and nuts mixture comes around 400 grams. Beginners kindly check out Baking Tips for Beginners before baking any cake.

Spices can be adjusted by adding little less or a little more to suit your taste.

The cake tastes best after 1 or 2 days of aging. The cake will keep at least for a few days.

      You can try by substituting 1/4 cup apple puree for 1 egg. I have not tried this cake without eggs, so not sure of the result.
