Bhindi Masala-Bhindi masala recipe-How to make bhindi masala

Ladies finger is one of my favorite vegetable. I love preparing this very simple bhindi masala/ladies finger masala as it goes well with both rice and roti. Today let us see how to prepare bhindi masala/Ladies finger recipe/Okra recipe/Vendakka masala following this easy recipe.

   Ingredients needed

   Ladies finger -500 grams (tender ones)
   Onion – 2 thinly sliced
   Tomato – 2 finely chopped
   Green Chilli – 1-2 slit
   Oil – 1 tbsp for frying bhindi

   Spice powder

   Turmeric powder – 1/4 tsp
   Coriander powder – 2 1/2 tsp
   Cumin/Jeera powder – 1 tsp
   Red chilli powder – 1 tsp or as needed
   Garam masala – 1/2 tsp

   For the seasoning

   Oil – 2 -2 1/2 tbsp
   Cumin/jeera seeds -1 tsp

Preparation


Wash ladies finger/okra well, wipe it dry with a clean towel, otherwise it will become sticky while cooking. Cut the base and the tip of the ladies finger. Then cut it into 2 inch long pieces.

Heat 1 tbsp of oil in a kadai and saute the ladies finger uncovered until it is half cooked or browns lightly. Keep it aside.

Method 


Heat oil in a pan /kadai, add cumin seeds, when it splutters, add onions, green chilli and saute until onions turn golden brown.


Then add chopped tomatoes, turmeric powder, chilli powder, coriander powder, cumin powder, garam masala powder, salt needed and cook until tomatoes become mushy. If the masala mixture becomes dry, you can add a tbsp of water and continue cooking until tomatoes become mushy.


Then add ladies finger, cover and cook on low heat, stirring from time to time, until ladies finger/okra becomes soft.

Serve hot with chapati or rice or naan.

Variation – You can add a tsp of ginger-garlic paste after onions turn golden brown and saute for a few minutes until the raw flavor goes and then add tomatoes, if preferred. 

Tips -To avoid ladiesfinger/bhindi from becoming sticky while cooking, follow any one of the tips given below if needed.

  • Add a tsp of yoghurt /curd (plain) while cooking.
  • Add a little besan while cooking.
  • Add a few drops of lemon juice while cooking.
  • Cook bhindi uncovered for the first few minutes.

    I'm a bachelor living and working in Islamabad, Pakistan. Today i really wanted to have mom's bhindi for dinner. But she is in my hometown, so i just bought half a kilo of bhindis to my flat with no idea about what to do with them…. came upon your blog searching for bhindi masala recipe, found the recipe to be simple… completed the ingrediants, made it and it turned out perfect…. almost like how ammi makes it.
