Baby Potato fry/roast is a simple and delicious dish prepared with baby potatoes. The baby potatoes are cooked, peeled, marinated in spices and then roasted evenly. This is a great accompaniment to rice and roti. It goes well with sambar sadam, rasam rice, curd rice and chapati. It is very simple to make and needs very less ingredients. It is a dish which everyone in the family will love. Learn to make this simple baby potato fry following this easy recipe with video.

Baby Potato Fry-Siru Urulai Roast

 Cook Time : 30 mins 
 Serves: 2-3

   Ingredients needed

   Baby Potatoes – 1/2 kg or 500 grams
   Oil – 3 1/2 tbsp
   Salt as required

   Spice Powder

   Turmeric Powder – 1/4 tsp
   Coriander powder – 2 tsp
   Cumin/Jeera powder – 1 tsp
   Chilli powder – 1 tsp

   For the seasoning

   Mustard seeds -1 tsp
   Cumin seeds – 1/2 tsp

Preparations


Soak the baby potatoes in water for 10 minutes. This will help to loosen the dirt and mud. Then wash it well under running water for 2-3 times to remove the mud.

Pressure cook the baby potatoes with enough water for 2 whistles. It should be soft but not mushy and should retain its shape. This is very important. Let it cool naturally. (avoid pouring cold water on top of it)

Peel the skin. This is a bit difficult task but worth the effort.

In a bowl, add the peeled potatoes, drizzle a tbsp of oil over it, then sprinkle all the spice powder (mentioned under Spice powder) and salt over the potatoes. Mix it well so that the potatoes are evenly coated with the spices. Let it sit for 30 minutes.

Method – After 30 minutes

Now heat the remaining oil in a pan or kadai , add mustard and cumin seeds, when they splutter, add the marinated potatoes.

Cook uncovered on low heat, stirring or tossing from time to time, till all the potatoes are evenly roasted.

Very Simple and tasty baby potato roast/baby aloo fry is ready.

It goes well as an accompaniment with rasam rice, sambar, kulambu and curd rice.

    If you remove the skin and boil, it would be easier to maintain the shape as peeling the skin would smash the potatoes
