Stuffed Lady’s finger-Stuffed Bhindi (Okra) Recipe

I am giving a short break to my Onam Special cooking series.Today let us learn how to make Stuffed Bhindi (Stuffed Bhindi Curry) by following this easy stuffed okra (Ladies finger) recipe. This is a fantastic side dish for chapati. Those who do not prefer potatoes can try this side dish for chapati. It goes well with rice also.

Stuffed Bhindi (Vendakkai-lady’s finger) Curry

   Ingredients needed

   Lady’s finger -400 grams
   Onion -2 cut lengthwise
   Tomato -2 chopped

   For the stuffing

   Turmeric powder – 1/4 tsp
   Chilli powder -1 tsp
   Coriander powder – 2 tsp
   Amchur powder – 1 3/4 tsp
   Garam masala powder – 1 1/2 tsp
   Salt as required

   For the seasoning

   Oil – 3 tbsp
   Cumin seeds /Jeera – 1 tsp
   Curry leaves -few

Tips to buy lady’s finger for stuffed ladies finger recipe

Select ladies finger which are small in size (size of your little finger) and are tender.

Break the tip and see, if it breaks, then it is tender.

Preparation

Wash ladies finger and wipe it dry with a clean kitchen towel. This is an important step as the ladies finger will become sticky, if you omit this step.

Cut off the tip and the crown. Make a long slit and keep it aside.

In a mixing bowl, add chilli powder, coriander powder, turmeric powder, garam masala powder or kitchen king masala, amchur powder and salt needed. Mix well and stuff the lady’s finger with this masala. See the picture below-they all got ready to be fried.

Method

Heat oil is a pan/kadai, add jeera seeds, when it splutters, add onions and fry until onions turn golden brown.

Then add tomatoes and cook until tomatoes become mushy. Add salt (remember we have already added salt to the stuffing).

Then add all the stuffed bhindi/okra and cook uncovered for 5-10 minutes on low flame stirring now and then. Then cook covered until tender. Serve with chapati or rice.

    i love okra very much . i cooked only sambar pulikkulambu, fried okra and side dish for chapathi . stuffed okra is very tasty.my child and husband like this tooooooooooo much thank u for giving this receipe
