Stuffed Bitter Gourd Recipe-Stuffed Karela

Bitter gourd has many health benefits. It has many vital vitamins, minerals and also has blood purifying properties. So why not include this wonder vegetable in our diet once in a week. This is one of my favorite stuffed curry. My kids who do not like bitter gourd, love this stuffed bitter gourd curry. If you prepare it the way I have mentioned below, this curry will not taste very bitter. It is a great side dish for chapati/roti and rice. Today let us learn how to make stuffed bitter gourd fry/stuffed Karela using our easy recipe.

Stuffed Bitter Gourd-Stuffed Karela

   Ingredients needed

   Bitter gourd – 6-7
   Onion – 2 big ones
   Ginger-garlic paste – 1 tsp

   Turmeric powder -1/4 tsp
   Coriander powder -2 tsp
   Chilli powder – 3/4 tsp or as required
   Salt as required

   Oil -1 1/2 tbsp for frying bitter gourds

   For the seasoning

   Oil -1 tbsp
   Cumin seeds/Jeera – 1 tsp
   Fennel seeds/Sombu – 3/4 tsp

Preparation


Wash and slightly scrap the skin. Make a 2 inch long slit on one side and remove all the seeds gently.

Then soak them in salted water for half an hour. Drain the water and keep it aside.

Finely chop onions. This is very important.

Method

Now let us prepare the stuffing


Heat a tbsp of oil, add jeera seeds, fennel seeds, when it splutters, add finely chopped onions and saute till they turn golden brown.

Then add ginger-garlic paste and saute for a few more minutes. Add turmeric powder, coriander powder, chilli powder and salt needed. Cook till the raw smell goes.

Remove from flame and let it cool.

Stuff the bitter gourd well with the prepared masala.

Take an idly pan or a steamer and steam the bitter gourds for a few minutes or until half cooked.

Now heat 2 tbsp of oil and fry the bitter gourds on low flame, tossing them in between, so that all the sides are well cooked and browned evenly.

Enjoy with hot rice or chapati

Note -You do not have to tie a thread around the bitter gourd as the masala will not come out.

Buy small or medium sized bitter gourds of uniform shape.
