Mango Sambar-Mango Sambar Recipe

Mango season has started in India, so here I am sharing  an easy mango sambar recipe with you all. We can prepare variety of dishes with mangoes like mango pachadi, mango rice, ice cream, mango panna etc. Today I am sharing with you an easy sambar recipe with raw mango which is very delicious with rice.

 Cook Time : 20 mins 
 Serves: 2

   Ingredients needed

   Raw Mango (chopped) – 1 cup
   Drumstick – 1
   Brinjal – 1
   Sambar Powder – 2 tsp
   Turmeric Powder – 1/2 tsp
   Tur dal -1/3 cup

  For the Seasoning

   Oil – 2 tsp
   Mustard seeds – 1 tsp
   Fenugreek seeds – 1/4 tsp
   Hing/asafoetida – a pinch
   Curry leaves – a sprig

   For Garnishing

   Coriander leaves

Preparation


Slightly scrap the skin of mangoes and cut it into medium sized cubes. Use only raw mangoes.

Pressure cook tur dal with 1/4 tsp of turmeric powder for 3 whistles or until soft. Mash it well and keep it aside.

Method 


Heat oil, add mustard seeds, when it splutters add fenugreek seeds (vendhayam), hing and curry leaves.

Now add brinjal, drumsticks, sambar powder, 1/4 tsp turmeric powder and saute for a few seconds.

South Indian style raw mango sambar

Add 1 1/2 cup of water, needed salt and cook on medium heat till the vegetables become tender.

Once the vegetables are cooked, add mango pieces, cooked tur dal and 3/4 cup of water.

Simmer and cook for a few minutes until the sambar thickens slightly. The sambar should not be too thick nor too watery. So adjust adding water accordingly.

Garnish with coriander leaves and serve hot with rice.

      You can add less but if you mango is too sour, no need to add.
