Lauki Kheer-Bottle Gourd Payasam-Sorakkai Payasam Recipe

Bottle gourd payasam (pudding) is a creamy and delicious dessert made with grated bottle gourd, milk, saffron and nuts. It is easy to make and tastes heavenly. You can make this for any special occasions or festivals. Bottle gourd is known as “suraikai” in Tamil and “sorakaya” in Telugu, “churakka” in Malayalam. As it is Tamil New Year and Vishu today, I wanted to share an easy, quick and delicious dessert with you all. Let’s learn how to make Bottle gourd payasam following this easy recipe with step wise pictures.

Lauki Kheer-Bottle Gourd Payasam

   Ingredients needed

   Bottle gourd – 1 cup grated
   Milk – 2 1/2 cup
   Sugar – 1/4 cup or as needed
   Cashew nuts – 6-7
   Almonds – 8-10 toasted
   Cardamom powder – 1/4 tsp
   Saffron strands – 4-5
   Ghee/clarified butter – 3 tsp

Preparation


Peel the skin of bottle gourd, discard the seeds and grate it using a grater with big holes. Let it sit for 15 minutes. Then squeeze out all the water from the bottle gourd and keep it aside.

Heat a tsp of ghee and roast cashew nuts until golden brown. Keep it aside.

Toast almonds and sliver (cut it thinly lengthwise) it.

Soak saffron strands in 2 tbsp warm milk.

Method


Heat 2 tsp of ghee and saute the bottle gourd for 3-4 minutes on medium heat stirring continuously.

Add milk and cook on medium heat, stirring from time to time until the milk reduces and thickens a little.

Once the milk reduces, add saffron, cardamom powder and sugar.

Stir until sugar dissolves. Then add cashew nuts and slivered almonds. Remove from heat.

Note – Instead of sugar, you can also add condensed milk for this bottle gourd kheer. Follow the same method mentioned above.

      Yes, you can but add it in the end and switch off to prevent the milk from curdling.

      No, you have to peel the skin and discard the seeds.

      Use fresh milk. There must be some problem with the milk otherwise it will not get curdled.
