Coconut Mango Overnight Oats Recipe

Delicious, filling, packed with nutrition, this Coconut Mango Overnight Oats (or for that matter any overnight oats) is a great alternative to traditional breakfast. They are just a breeze to put together and will keep you feeling full all morning. When you make it the day before, you can get up leisurely the next morning. I love to start my day with anything healthy and delicious and overnight oats is one of my favorites. Today we will learn how to make this easy, make-ahead breakfast packed with the goodness of oats, mangoes, coconut and almonds.

Coconut Mango Overnight Oats

   Ingredients needed

   Rolled Oats (old fashioned oats) – 1/3 cup
   Milk – 1/3 cup
   Ripe Mango – 1/2 cup chopped
   Grated coconut – 2 tbsp
   Honey – 1-2 tsp
   Almonds – 5-6

Preparation


Soak almonds in hot water for 5 minutes. Remove the skin and cut it thinly lengthwise.

Peel the skin and chop mangoes into small pieces. Choose ripe and sweet mangoes.

Method


Take a glass bowl or mason jar, layer it with rolled oats, top it with milk, chopped mangoes, grated coconut, slivered almonds and honey. Cover it and refrigerator overnight.

Take it out the next morning, mix well, top it with more mango pieces, almonds and grated coconut. Enjoy!

Note – You can use quick cooking oats also.

For a thinner consistency, add more milk.

For vegan version -Use almond milk or coconut milk instead of dairy milk.

    The rolled oats is cooked with water separately and then used in layering?

      No, it is not cooked. It becomes very soft in the morning.
