August 30, 2016 by PadhuSankar 1 Comment

Sambaram is Kerala style spiced butter milk. It is flavored with ginger, green chillies, shallots and curry leaves. I love all types of spiced buttermilk whether it is neer mor or masala chaas or sambaram. It is refreshing and very delicious. As Onam is just a few days away, I wanted to share this moru vellam recipe. Today we will learn how to make Kerala style Butter milk/Pacha moru following this easy recipe.(Buttermilk is known as “mor” in Tamil, “majjige”  in Telugu).

   Ingredients needed

   Curd (Thayir) – 1 cup
   Water (vellam) – 1 1/2 cup

Method

Finely chop green chilli, ginger (peel the skin and chop) and shallots. You can also crush ginger and green chillies.

Blend 1 cup of curd with 1 1/2 cup of water. You can also use the traditional wooden churner called “mattu”. Add salt to taste.

Then add shallots, curry leaves, crushed ginger and green chillies. Mix well and leave it for 5 minutes for the flavors to get infused. Sambaram is ready to be served.

Note –  You can skip shallots, if you do not prefer, but it tastes so good and it is good for the health.
