Spiced Buttermilk-Neer Mor-Sambharam

March 31, 2012 by PadhuSankar 13 Comments

Summer is here. Stay away from aerated drinks and have a refreshing glass of buttermilk. It is known as Neer mor in Tamil, sambharam in Malayalam and chaas in Hindi. There is only slight variations in the preparation. This is my style of making buttermilk. During summer I prepare this almost everyday and absolutely love it very much. What could be a more healthier way to beat the summer heat!

 Prep Time : 5 mins

 Serves: 2
 Recipe Category: Beverage
 Recipe Cuisine: Indian

   Ingredients needed

   Curd – 1 cup
   Water – 2 cups
Green chilli -1 very finely chopped
Ginger – a small piece grated
Coriander leaves – 2 tsp finely chopped
   Curry leaves – 2-3 leaves
Roasted cumin seeds powder -1/2 tsp
Juice of 1/2 a lemon (optional)
   Salt as required

Preparation

Chop coriander leaves, chilli and tender curry leaves very finely so that it does not get stuck in the throat.

Grate or chop ginger very finely.

Method

Blend curd and water. You can use the traditional mattu also.

Add finely chopped green chilli, ginger, coriander leaves, curry leaves, roasted cumin powder and salt required.

Squeeze juice of half a lemon. Mix well and serve chilled.

Variations

1.You can season it with mustard seeds and hing if you prefer. For South Indian version, it is same as the above except for the cumin powder.

2.You can add 1/4 tsp of chat masala powder to make masala chaas. Recipe same as above.

3.Instead of chopping it finely, you can add crushed ginger and green chilli.

Roasted Cumin Powder – Roast cumin powder in a pan without oil. Powder it.
