Vegetable Fried Rice-How to prepare Vegetable Fried Rice

We usually order Fried rice when we visit hotels but do you know that we can prepare it in no time at home. Moreover the advantage of preparing at home is that we can prepare it to suit our liking, adjust sauces to suit our taste buds and we can also skip ajinomoto which is very harmful for our health. I usually prepare this with brown rice to make it more healthier and it tastes really good with brown rice. How to cook brown rice? .Do try it. Here is a quick recipe for Indo Chinese Vegetable Fried rice-

Vegetable Fried Rice

 Prep Time : 10 mins

 Cook Time : 15 mins 
 Serves: 2

   Ingredients needed

   Basmati rice – 1 cup
   Oil -1 tsp for cooking rice
   Beans – 1/4 cup finely chopped
   Carrot – 1/4 cup finely chopped
   Cabbage – 1 cup shredded
   Capsicum -1/4 cup finely chopped
   Spring onion greens – 2 1/2 tbsp finely chopped

   Olive oil/Any refined oil – 2 1/2 tbsp
   Garlic -1 1/2 tbsp
   Ginger – 1 inch piece

   Seasoning

   Vinegar – 1 tsp
   Red Chilli sauce – 1-2 tsp
   Soya sauce -2-3 tsp
   Salt and Pepper powder to taste (I used white pepper powder)

Vegetable Fried rice

Preparation

Soak Basmati rice for 15 minutes and cook adding 1 1/2 cups of boiling water and a tsp of oil. Once cooked, fluff it with a fork and spread it on a plate to cool. The cooked grains should be separate.

Finely chop beans, carrot, capsicum and spring onion greens.

Mince garlic and ginger.

Shred cabbage into thin fine strips.

Method

Heat oil in a pan, when the oil is very hot, add garlic and ginger, saute for a few seconds. Then add beans and fry for a few seconds, followed by carrot, cabbage, capsicum and spring onion greens. (Add vegetables in the same order)

All the vegetables should be sauteed on high flame and continuous stirring is necessary as we want the vegetables to be crunchy and not fully cooked. Add cooked rice, soya sauce, vinegar, needed salt and pepper powder. Mix well and serve hot.

Note

The whole procedure should be done on high flames.

Chopping the vegetables finely is very important.

I did not add much soya sauce or red chilli sauce but you can add the sauces according to your taste to make it more Chinese. Adjust seasoning according to your taste.

Adding finely chopped mushrooms along with vegetables makes it even more delicious.

Using olive oil adds more flavor but you can also use any refined oil. Buy Olive oil which is meant for cooking purpose.

While on my trip to Kodaikanal long time back (Hill station in TN),I saw a very old and poor lady making and selling these puppets for a living. I was touched by her hard work at that age and bought 2 puppets from her. I am happy that the dragon puppet I got from her fitted well for this Chinese Fried Rice.

    Sometimes I do add lemon juice instead of vinegar but vinegar gives a different taste. Sauces can adjusted according to your preferences.We can keep in touch through facebook.

    We tried 3 recipes (veg fried rice,Gobi manchurian & chilli paneer) from your website on some good occasion yesterday.We triple the recipe & tried it for more persons.
    It is a heavenly treat padma akka & all are foolproof recipes.Till yesterday,we have been thinking that all these rich& yummy dishes can be made tasty only in restaurants,but that is wrong after trying these recipes of yours,it tastes absolutely yummy & more tasty than the restaurants ones.Whenever I go to restaurant my first choice would be veg fried rice & Gobi manchurian.Hereafter no need to go for restaurants to have this & it can be made at home,it is health wise good & can save money spending there in restaurants.
    All your recipes are very tasty and your children are very lucky that they can have tasty food all days .
    Thanks for sharing veg fried rice recipe & going to make it for next weekend as well .

    I would like to thank you for sharing some of the recipes. We have tried your Veg Pulao,Veg fried rice,rava dosa,channa masala and paneer butter masala.     Hi, I tried your veg noodles yesterday and it was super yumm … unfortunately i followed the same receipe for veg fried rice and bang it failed, though the taste was good the rice inspite of me cooking 3/4th broke into halves :(. Gonna try this (veg fried rice) again tomom 🙂

    Hi Padma…the rice looks very irresistible 🙂 I tried it making it earlier following my own method but it always turned dark…may be slightly brown at the very minute of adding soya sauce.so how should we keep the rice white…should the soya sauce be added in just drops.kindly guide. Thanks again

      I do not add much soya sauce as my daughter does not prefer it. May be it is because of that. No secrets. Sauce can be increased or decreased according to personal preferences.

    Tried fried rice today, turned out yum-thanks a ton, but rice turned light brown though i used 1 tsp of soyasauce only-any alternate ingredient so that rice remains white?

      If you add soya sauce the color will change to light brown. No alternative ingredient. If you do not like it, skip it.

    Out of many recipes which I have come across and tried for Veg fried rice, this one is authentic and it came out really well when I prepared last Saturday. With the balance vegetables I again tried on Sunday. Some more improvement in the process and taste. Awesome Padhu. My daughters though both grown up enjoyed their father's preparation.       Kannan again writing this after one year. One day i prepared fried rice for my daughter for her college…..Now this fried rice is most sort after by her friends. Minimum 6 persons Fried rice i am asked to prepare by Daughter whenever I do….Thanks once again…As i said many videos are on website….But I first look the recipe in your blog and then only i go to others….Continue paddu.

      Yes, you can. Keep the veggies in an airtight container in the refrigerator.
