 Prep Time : 10 mins

 Cook Time : 20 mins
 Serves: 2
 Recipe Category: Side dish-curry
 Recipe Cuisine: Kerala Recipes

   Ingredients needed

Yellow pumpkin (Mathanga )- 2 cups chopped
Black eyed beans /Cow Peas – 1/3 cup
Turmeric powder – a generous pinch
   Chilli powder – 1 tsp
   Salt as required

   For grinding

   Grated coconut – 1/3 cup
   Jeera /Cumin seeds – 1 tsp
   Green chilli – 2

   For the seasoning

Oil – 3 tsp ( Coconut oil for authentic Kerala taste or any other oil)
   Mustard seeds -1 tsp
   Red chilli -1
   Curry leaves – few

   For garnishing

Grated coconut -1/4 cup (to be fried and garnished)

Preparation

Soak cow peas overnight or for 6-7 hours. Pressure cook with a little salt and keep it aside.(normally small red colored black-eyed bean is used but I have used the white ones)

Peel the skin, discard the seeds and chop the yellow pumpkin into medium sized pieces.

Grind coconut, jeera and green chilli together and keep it aside.

Method

Cook pumpkin with turmeric powder, chilli powder and salt. (use less water)

Now add the pressure cooked cow peas to the pumpkin. Mash everything slightly.

Add the ground coconut paste and boil for a few minutes. Check of salt.

Heat 2 tsp of oil, add mustard seeds, when it splutters, add red chilli and curry leaves. Add this seasoning to the erissery.

Finally heat a tsp of oil and fry the grated coconut (1/4 cup mentioned for seasoning) till it becomes brown and pour it over the erissery. Delicious Mathanga Erissery/Yellow pumpkin erissery is ready to be served with rice.

Note

This curry can be prepared dry or semi solid consistency.

Mathanga means yellow pumpkin in Malayalam, in tamil it is called Parangikai.
