Baby Corn Stir fry-Baby Corn Recipes

Baby corn stir fry is a very simple dish which goes well with both rice and chapati. It can be prepared in a few minutes time. The highlight of this curry is the crunchiness of the baby corn and the capsicum. Today let us learn how to make baby corn sabzi/stir fry following this easy recipe.

Easy Baby Corn Stir Fry

 Prep Time : 10 mins

 Cook Time : 15 mins 
 Serves: 2-3

   Ingredients needed

   Baby corn -10-12
   Onions – 2
   Tomato – 1
   Capsicum (green) -1

   Chilli powder – 1/2 tsp (or as required)
   Turmeric powder – a pinch
   Garam masala powder – 1/2 tsp
   Salt as required
   Oil – 3 tsp

Preparation


Cut baby corn into thin strips. Cut tomatoes (remove the seeds), onion and capsicum lengthwise.

(All the vegetables should be cut uniformly for even cooking.If you cut baby corn into small rounds, then cut onion, tomato and capsicum also into smaller pieces.)

Method


Heat oil, (no seasoning) add onions and fry till onions turn transparent.

Add tomatoes and cook for a few minutes.

Then add capsicum, baby corn, salt, chilli powder, turmeric powder, garam masala and cook for a further few minutes. Stir in between to prevent it from getting burnt. The baby corn and the capsicum should be crunchy, so do not over cooked.

Note – You can also par boil the baby corns with a little salt.

If preferred you can add ginger garlic paste after sauteing the onions.
