Mixed Vegetable Raita-Mixed Vegetable Raita recipe

Raita is nothing but an Indian salad with yogurt dressing. Mixed vegetable raita goes well with Mint pulao,Vegetable Pulav, Peas Pulav, Vegetable Biriyani, Bisibelabath, Tomato rice, Brinjal rice and most mixed rice recipes. I love to have it with roti/chapati , paratha, sometimes as such without any accompaniments.

Ingredients needed

Onion -1

Tomato -1

Carrot -1

Capsicum -1

Cucumber -1

Roasted jeera/cumin powder -1/2 tsp

Curd -1 1/2 cups (whisk it well)

Salt as required

For the seasoning

Mustard seeds -1/2 tsp

Green chillies – 1 finely chopped

Preparation

Wash and peel the skin of carrots and cucumber.

Chop carrots, tomatoes (remove the seeds) capsicums and onions finely.

Chop cucumber into small pieces.

Method

Take curd and mix all the vegetables. Add salt required.

Heat a tsp of oil, add mustard seeds, when mustard splutters, add finely chopped green chillies.Saute for a second and add to the curd + vegetable mixture.

Sprinkle roasted jeera/cumin powder and mix it .

Garnish with finely chopped coriander leaves.

Serve cold.
