Plantain Stem Stir Fry-Vazhai Thandu Poriyal

Plantain stem is rich in fibre. Fiber is an integral part of a healthy diet and has many health benefits. It helps to prevent constipation .Those who want to reduce weight can have fibre rich food before meals.Include plantain stem/Banana stem in your diet at least once in a week regularly .Try this simple plantain stem stir fry recipe-

Plantain Stem Stir Fry

Serves -2


Ingredients needed

Plantain stem – 2 cup
Split moong dal/Pasi parupu – 2 tbsp
Grated Coconut – 3 tbsp
Turmeric powder – a pinch
Oil- 2 tsp
Salt as required

For the seasoning

Mustard -1 tsp
Asafoetida/Hing – a pinch
Urad dal -1 tsp
Green chilli – 1- 2 (slit it)
Curry leaves – little

Preparation

Remove the outer covering of the stem and cut it into rounds removing the thread like fibre with you index finger .Then chop it into small thin pieces. Keep it in diluted buttermilk to prevent discoloration till you use it for cooking.


Cook moong dal /Pasi parupu separately in a little water till soft. Keep it aside.

Method

1. Heat 2 tsp of oil, add mustard seeds, when it splutters, add hing, urad dal, green chillies and curry leaves.

2. When dal turns golden brown, add the chopped plantain stem (strain the buttermilk and add the plantain stem alone), turmeric powder, salt needed and cook covered till plantain stem becomes soft. Sprinkle water in between to prevent it from getting burnt.

3. Once plantain stem is cooked, add the cooked moong dal, grated coconut and mix it well. Switch off the flame.

Plantain stem curry is ready to be served as an accompaniment for rice.
