Ada Pradhaman Recipe-Kerala style (with jaggery and coconut milk)-Onam Sadya Menu Recipes

Ada Pradhaman is another classic dessert or traditional payasam of Kerala. Payasam especially Ada payasam, be it palada payasam (prepared with rice ada, milk and sugar) or ada pradhaman (prepared with jaggery, rice ada and coconut milk) is especially popular during the festival of Onam. It  is an integral part of Onam Sadhya Menu. Today we will learn how to make Ada Pradhaman following this easy recipe with step wise pictures.

Ada Pradhaman-Kerala style

 This is the picture of rice ada or rice flakes. I got it ready made.

How to make Ada Pradhaman 

Prep time -under 20 mins
Cook time – under 40 mins
Serves – 3

Ingredients needed

Rice ada -1/2 cup
Jaggery – 1 1/4 cup
Thin coconut milk – 1 1/4 cup (Refer how to extract thin and thick coconut milk)
Thick coconut milk – 1/2 cup
Coconut bits or thin small pieces – 2 tbsp
Cashew nuts -2 tbsp or 5-6
Raisins -2-3 tbsp
Cardamom powder -1/4 tsp
Ghee – 1-2 tbsp +2 tsp

Preparation 

Bring water to rolling boil, switch off and add the ada. Let it soak for 30 minutes. After 30 minutes, drain the water completely and rinse the ada 2-3 times in cold water. This is done to prevent the ada from sticking to each other. Drain the water completely. Keep it aside for some time. 

Dissolve jaggery in half cup of water and strain it to remove impurities if any.

Heat 2 tsp of ghee and fry the cashew nuts, raisins and coconut pieces separately. Remove from pan.

Method 

In the same pan, heat more ghee and fry the ada in medium or low flame for 4-5 minutes.

Now add jaggery water to the ada and cook in medium flame until it thickens.

Once it thickens, add the thin coconut milk (1 1/4 cup). Cook on medium flame until it thickens again.

Once it thickens, add the thick coconut milk, fried cashew nuts, raisins, cardamom powder and coconut bits. Mix well and switch off the flame. Do not cook after adding the thick coconut milk.

Delicious Ada Pradhaman is ready. Serve hot or chilled.

Note – Once it cools, it will thicken further.

    Hello Padhu, thanks for the recipe. I want to use canned coconut milk for this recipe. For thin coconut milk , should I dilute it? And for thick milk can I use it as is from the can?

      Yes, you can use canned coconut milk. You can dilute it with water to make thin coconut milk and for thick milk you can use as it is from the can. Do not boil after adding thick coconut milk.

      Thin coconut milk – For 1 cup of canned coconut milk, you can add 1/2 cup of water. If it is too thick, you may dilute it more to get thin coconut milk.

      Yes, you can make by grinding rice but I have not tried it yet. I used readymade rice ada.
