Kara Chutney Recipe-Spicy Red Chutney-Side dish for Appam,Idli,Dosa

This is a very popular Chettinad chutney prepared with pearl onions. This chutney is very easy to prepare and goes well with idli, dosa, kuzhi paniyaram and appam. It is also one for my favorite chutney for dosa. It tastes heavenly with mudakathan keerai dosai (coming soon) and paniyaram. Today we will learn how to make kara chutney following this simple recipe.

 Prep Time : 15 mins

 Cook Time : 15 mins 
 Serves: 2

   Ingredients needed

   Shallots/pearl onions – 1 cup
   Tomato -1
   Red chillies -3-4 or as needed
   Garlic – 2 cloves (optional)
   Tamarind – very less
   Salt needed

   For the seasoning

   Oil -3 tbsp
   Mustard seeds -1 tsp
   Urad dal -3/4 tsp
   Curry leaves -few

Method 


Grind together onion, tomato, red chillies, garlic, tamarind and salt to a smooth paste.

Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, curry leaves and the ground paste.

Cook on medium flame until the mixture oozes out oil.

    i didnt have shallots so i substituted it with red onion
    also i took 2 onions (Medium) and 1 Tomato
    But i coundnot get the red color . Color was yellowish orange

    Please tell me how to correct it so that i can get perfect red color
    also i used normal long dried red chillies.
    Should I use Small Round ones or not

    Can you tell me the difference between the two chillies?

      Using shallots give a nice taste and color to the chutney- I know peeling it is a pain -but it gives a nice flavor. This chutney requires more oil. Frying in oil nicely is necessary. I have used only the long dried red chillies. The small round ones are more hot.

    Difference between thokku and chutney?

      Thokku is more like pickle. More oil is added to thokku and it stays good for 10 days in the refrigerator.

    Hi Padhu,
    Followed the recipe as per your instructions, the colour and taste came very well but it had a strong flavour of the onion.
    I’m not sure If that’s expected and I’m a fresh starter at cooking. My friends suggested that it would be better to sauté the shallot first before grinding to paste.

    Over all it was a great recipe
