Kuzhi Paniyaram-Masala Paniyaram Recipe

Are you bored of idli and dosa? Then try kuzhi paniyaram for a change.This is loved by both kids and adults equally. You can prepare this paniyaram with the regular idli or dosa batter. You can have this as a tea time snack, can pack this in your kids snack box and with tomato chutney this dish even makes a light breakfast or dinner. It can be prepared in a jiffy, if you have idly batter and paniyaram pan with you. Now a days you get non stick paniyaram pans which does not requires much oil, so it is worth investing in it. Today we will learn how to make Kuzhi paniyaram (spicy version) following this easy recipe.

   Ingredients needed

   Idli Batter – 2 cups

   For the seasoning

   Oil -3 tsp
   Mustard seeds -1 tsp
   Bengal gram dal (kadalai paruppu) – 1 tbsp
   Urad dal -2 tsp
   Whole black pepper – 1 tsp
   Onion – 1
   Green chilli -1-2 finely chopped
   Ginger -1 inch piece – finely chopped
   Curry leaves – few tender ones
   Salt to taste

   Coriander leaves – 2 tbsp finely chopped
   Grated carrot – 2-3 tbsp (optional)

How to make paniyaram

Method 

Heat 2 tsp of oil in a pan, add mustard seeds, when it splutters, add bengal gram dal, urad dal and whole black peppercorns. When dal turns golden brown, add finely chopped onions, ginger, green chilli and curry leaves.

Saute until onions turn pink. Add needed salt. Let it cool a little.

Now mix the above with the idly batter. Add finely chopped coriander leaves and grated carrot (optional). Our paniyaram batter is ready now.

Heat a paniyaram pan, add 1/2 tsp of oil in each hole and pour a tbsp of batter in each hole.(see picture above)

Keep the heat on low heat and close the pan. Once the edges turn golden brown, flip over the paniyaram to the other side using a stainless steel rod or spoon.

Cook the other side also until golden brown. Remove from pan using a paniyaram stainless steel rod or spoon and serve hot with tomato chutney or kara chutney or sambar.

Note – You can add other vegetables like capsicum, corn or grated beetroot. It will be more healthy and colorful.

Variations


You can add grated carrot, grated beetroot or grated cabbage to the batter to make it more nutritious.

Using of pearl onions/ baby onions gives a nice taste.

    Archana – You cannot do it in dosa batter if it is watery.Idly batter is best for paniyarams

    Today i made paniyaram it tasted well. But i faced problem in turning it, it was sticking in the pan mine is an ordinary one not non-stick. And it was very crispy any idea why ?

      You have to use only paniyaram pan or you can deep fry the traditional method as I have done for my sweet appam

    I usually prepare this on saturday mornings with left over dosa batter. I add a little ragi flour, vegetables like tomato, capsicum and carrots. I also add Hing and ginger. It is very healthy and very very tasty

    Hi Padhu, Do we fill the depressions in the vessel all the way to the top or 3/4 way up so that if they puff up it wont overflow?

      You can fill the cavity fully as you see in the picture. It will raise.
