Carrot as we all know is rich in Vitamin A and is a powerful cleansing food. It is good for the eyes and the skin. To enjoy the full nutritional benefits of carrot, it should be taken raw in the form of salads or just boiled or steamed. Many important minerals are lost, if it is over cooked. Today let us learn how to make a simple and healthy carrot stir fry (without onions, garlic or masala) with this easy stir fry recipe-

Carrot Poriyal-Carrot Stir fry-Carrot Sabzi

 Author:Padhu Sankar   Ingredients needed

   Carrot – 500 grams
   Grated coconut -1/4 cup
   Salt needed

For the seasoning

   Oil -2 tsp
   Mustard seeds-1 tsp
   Urad dal -1/2 tsp
   Red Chillies -2
   Hing- a pinch
   Green chilli (slit) -2
   Curry leaves- a sprig

For Garnishing

   Coriander leaves

 

Preparation

Wash, peel and chop carrots.

Method

Heat 2 tsp of oil in a pan or kadai, add mustard seeds, when it splutters, add hing, urad dal, red chillies, green chilli and curry leaves.
When urad dal turns golden brown, add the chopped carrots and little water (around 1/4 cup). Cover it with a lid and cook on low heat stirring from time to time. If the water has evaporated, you can sprinkle more water and cook till carrots turn soft. Add needed salt.
Once the carrots become soft, add grated coconut, mix well and switch off the flame.
Goes well as a side dish for steamed rice (rasam sadam, sambar, kuzhambu sadam).

    Hi I tried with grated carrot. But it dint have the sweetness of carrot. Sometimes tasted bitter too. Where s the fault? Should i add water little by little or need not add water ?

      Problem must be with the carrots. Buy fresh ones.
