Vegetable Makhanwala-Vegetable Makhani

Vegetable Makhanwala is a rich and creamy dish in which mixed vegetables are cooked in onion tomato gravy and cashew nut paste. It is a fantastic side dish for chapati, roti, ghee rice, vegetable pulao, peas pulao, coconut rice, jeera pulao, paneer pulao, carrot rice, vegetable biryani and most flavored rice. Today let us learn how to prepare Vegetable Makhanwala using our easy makhani subzi recipe.

Vegetable Makhanwala-Vegetable MakhaniHow to make Vegetable Makhanwala/Makhani Sabzi
Serves 3-4

Ingredients needed

Onion – 2
Tomato -3
Ginger garlic paste – 1 1/2 tsp
Green chilli -1
Cashew nut paste – 2 tbsp
Butter -2 tbsp
Oil – 1/2 tbsp

Vegetables

Carrot -1
French beans -8-9
Cauliflower florets -6-7
Green peas – handful
Potato -1
Green Capsicum – 1

Spice powder

Garam Masala Powder -1 tsp
Red chilli powder- 1/2 -1 tsp
Coriander powder -2 tsp
Turmeric powder -1/4 tsp
Kasuri methi -1/2 tsp
Salt as required

For the seasoning

Jeera/ cumin seeds – 1/2 tsp
Cloves -2
Cinnamon – 1 inch piece
Cardamom -1

Fresh cream – 2 tbsp for garnishing

Preparation

Wash and put cauliflower in salted boiling water. Remove it after 6-7 minutes.

Blanch tomatoes. (Refer- How to blanch tomatoes if you want to know)

Cut all the vegetable into medium size pieces.

Par boil or steam all the vegetables except capsicum with little salt. Keep it aside.

Boil 1 onion in water for 7-8 minutes. Drain the water and grind it with 1 green chilli.

Soak 6-10 cashew nuts in hot water, drain the water and grind it to a smooth paste.

Method

Heat butter+oil, add jeera seeds, when it splutters, add whole garam masala and toss for a few seconds.

Add finely chopped onion and saute till nice golden brown. This step is very important and you have to stir continuously.

Then add onion paste and ginger garlic paste, saute for few more minutes.

Add cashew nut paste and cook for a few minutes.

Now add tomato puree and all the spice powder mentioned under ‘spice powder’.

Cook till the tomatoes leave oil. Then add all the vegetables, chopped capsicum, crushed kasuri methi, salt and needed water. You can add less or more water according to the consistency you need and cook for some more time till everything gets blended well.

Garnish with coriander leaves and fresh cream.
