Eggless Sponge Cake-Eggless Vanilla Cupcake Recipe

Now that Christmas is round the corner, stay tuned for lot of cake recipes. As I have already posted Eggless Yogurt Vanilla Cake, this is another egg less sponge vanilla cake using condensed milk. You also have vanilla cake with eggs in my blog. For a change I made cupcakes this time. Cupcakes can be had as a tea time snack and are also great to pack in your kids snack box. I enjoyed decorating these cupcakes and doing this post. Today we will learn how to make Condensed Milk Eggless cake following this easy recipe.

Eggless vanilla cupcake

Ingredients needed 

All purpose flour/maida – 1 1/4 cup
Baking powder -1 tsp
Baking soda -1/2 tsp
Butter -120 grams
Sugar – 2 tbsp
Condensed milk – 1/2 cup
Milk -1/2 cup (warm milk)
Lemon juice – 1 tsp
Vanilla essence – 1 tsp

Preparation

All the ingredients should be at room temperature.

Add baking powder, baking soda to maida and sieve together twice. Keep it aside. Let us call this dry ingredients.

Preheat the oven at 180 degree C for 10 minutes.

Line cupcake moulds with paper liners or grease cupcake moulds with little butter.

how to make eggless cake

Method 

Beat together condensed milk, butter, sugar and vanilla essence with a hand mixer or an electrical cake mixer.(pic-1 cw)

Now add half of the dry ingredients and half of the milk and gently fold it. Then add the rest of the dry ingredients and the remaining milk, lemon juice and mix gently. (pic-3 and 4).Now the cake batter is ready.

Spoon the batter into cupcake moulds and bake in a preheated oven for 30 minutes (180 degree C) or until a toothpick inserted into the center of the cake comes out clean.If you do not want cupcakes, then bake in an ordinary cake pan.

Allow the cake to cool and then decorate it with butter icing if preferred.

    Nice padhu…I am going to try this for the holiday event at my work.Quik clarifiation milk and lemon juice ,did it go well?.Will any curdline happen when the two mixed?.

    No nothing happened as it is just a tsp of lemon juice.Milk should not be hot but warm. Also you can use 1 tsp of vinegar instead of lemon juice.

    I have a convection oven. does the heating time differs from the normal oven. As I have burn my 3 cakes already. And if needs to be preheated then how much time would be sufficient and on what temperature. Please help

    Yes, there is lot of difference between the two.Convection oven cooks food much faster than a conventional oven.In my OTG I preheat for 180 degree C for 15 minutes. I do not know much about the convection oven.You have to learn by trial and error.

    I was requested by my hubby "please don't make cakes as they never taste good and v have to tolerate them just because u have made" but after eating this cup cakes today, they said they were delicious in Taste but were not very spongy. could u please tell me why, what could have gone wrong?

    Also I would like to tell you that egg less cakes are not as spongy and fluffy like cake with eggs.Egg less cake are only for those who do not include eggs in their diet.

    Hi Padhu,

    If we dont have condensed milk, can we use Sugar? Is there any substitute for Condensed milk apart from Yogurt.
