Coconut Couscous with Raisins-Indian Recipes with Couscous

I love couscous because it is quick and easy to prepare and also extremely versatile and delicious. I love cooking and experimenting Indian dishes with couscous. This coconut couscous with plenty of raisins and cashew nuts is one of my favorite couscous dish.  I have made it in Indian style. I have prepared couscous with thin coconut milk instead of water and have added lot of raisins which makes it very delicious. Today we will learn how to make coconut couscous following this easy recipe.

   Ingredients needed

   Couscous – 1/2 cup
   Thin coconut milk – 1 cup
   Salt – 1/4 tsp

   Raisins – 1/4 cup
   Cashew nuts – 3 tbsp

   For the seasoning

   Coconut oil – 1 1/2 tbsp
   Mustard seeds – 1 tsp
   Urad dal – 1 tsp
   Red Chilli – 1
   Green chilli – 1
   Ginger – 1 tsp (peeled and finely chopped)
   Curry Leaves – a sprig
   Grated coconut – 1/2 cup + 1 tbsp

Preparation 


Place couscous in a bowl. Add 1/4 tsp of salt. Bring diluted thin coconut milk to boil, when it starts boiling, pour it over the couscous, stir and keep it covered. Leave it undisturbed for 6-10 minutes.

Then fluff it with a fork. Couscous is now ready. Keep it aside. Check out detailed post on how to cook couscous.

Method 


Heat coconut oil in a pan/kadai and fry the raisins and cashew nuts separately. Remove from pan and keep it aside.

In the same pan, add mustard seeds, when it splutters, add urad dal, red chillies, green chillies, ginger, and curry leaves.

Saute for a few seconds and then add grated coconut.

Saute on medium heat stirring continuously until the coconut changes color to a pale yellow as seen in the picture below. Add salt needed.

Add the fluffed couscous, cashew nuts, raisins (do not omit the raisins and cashew nuts) and mix well and remove from heat.

Indian Recipes with Couscous

Delicious Indian style coconut couscous is ready. Enjoy it as such or with papads.
