Mushroom Soup Recipe-Cream of Mushroom Soup-Easy Soup Recipes

Mushrooms are well known for its health benefits. They can be called “wonder food”. They are rich in calcium, iron, potassium, copper and selenium (selenium is very good for the health of bones, hair, nails and teeth) Do you know that  mushroom contains vitamin-D in edible form. So why not include mushrooms in our diet once in a week. This creamy soup is another great addition to my long list of mushroom recipes. This creamy mushroom soup is very easy to make at home and also tastes delicious. Today we will learn how to make mushroom soup following this easy recipe.

Creamy Mushroom Soup

   Ingredients needed

   Button mushrooms -1 cup chopped finely
   Medium sized onion -1 finely chopped
   Butter -1 1/2 tbsp
   Cornflour – 1 1/2 tbsp
   Milk – 2 1/2 cups
   Salt and pepper powder to taste
   Cheese – 2 tbsp grated

Preparation 


Wash and clean mushrooms and chop it finely. Check how to clean mushrooms in my mushroom pulao recipe.

Mix cornflour with 2 tbsp cold milk and keep it aside.

Method 


Heat butter in a pan, add finely chopped onions.

When onions turn translucent, add chopped mushroom and saute for a few minutes.

Add milk and boil the soup for 5-6 minutes.

Simmer and add cornflour mixed with cold milk stirring continuously to prevent forming of lumps.

When the soup starts thickening, add salt and pepper powder to taste and remove from heat.

Garnish with grated cheese and serve piping hot.

      Yes, it will take very less time for the mushrooms to get cooked.
